The fresh haunches are chosen among those deemed perfect, carefully selected for weight, thickness of the fat and compactness of the meat, to obtain a product with maximum sweetness and quality. This dry-cured ham is guaranteed by the hot-iron “Leporati Gran Riserva” brand, and it is matured for at least 16 months.
